1/4 cup margarine or olive oil
2 cups diced onions
1 cup diced mushrooms or celery
1 Tbsp each minced sage and thyme
Salt and pepper to taste
3 cups vegetable or no-chicken broth
16 cups cubed stale country white bread, cubed or in coarse crumbs.
Preheat the oven to 375 degrees F. Melt margarine or use olive oil in a large skillet over medium heat. Add onions and mushrooms/celery and saute about 5 minutes.
Pour in the vegetable broth and stir. Add stale bread and stir until all the broth is incorporated in with the bread. Transfer to a greased 9x12 or 3-quart baking dish . Cover and bake 30 minutes, then uncover and bake until golden, about 20 more minutes.
