Sweet Potato Pie


1 Tbsp powdered egg replace (Ener-G)
1 Tbsp corn starch
1 1/4 cup soy milk (or half box of silken tofu and 1/2 cups soy milk for added thickness)
2 cups mashed sweet potato or yams
1/4 cup sugar
2 Tbsp molasses
1 Tbsp cinnamon (or 1 Tbsp Chai Spice or Pumpkin Pie Spice)
1/2 tsp salt
1 pie shell, refrigerated (thawed if frozen)

Preheat oven to 375 degrees F.

Using a blender, whip all ingredients except the pie shell. Blend until everything is well incorporated and smooth.

Pour into pie shell and bake for 55 minutes, rotating halfway thru. Cool on racks completely before serving. 

This recipe works for pumpkin pie as well, just replace sweet potato with pumpkin puree.
