Mashed Potatoes and Gravy


Mashed potatoes are fairly basic. This time I used fresh home-grown red potatoes from my father's garden and there isn't much better than that! Just boiled them and mashed them with some unsweetened soymilk and a little bit of margarine. The key is the gravy!

Nutritional Yeast Gravy

3 Tbsp margarine
1/4 cup flour
1/4 cup nutritional yeast
1 1/2 - 2 cups warm water, or better yet unsweetened soymilk
Healthy dash of black pepper

Melt margarine and add flour and nutritional yeast. Mix into a "rough" which is similar to a thick dough. If it doesn't form a ball, add a few drops of water. Cook over medium-high heat for a few minutes then start adding the water a little at a time and mix into the rough. Mixing a little at a time will prevent lumps. Keep mixing until all the water is incorporated. If its too thick, add a little more but don't overdo it! I love fresh ground black pepper but any will do. Pour over mashed potatoes, or biscuits! Yummers :)
