Sweet Potato Pie

1 Tbsp powdered egg replace (Ener-G)
1 Tbsp corn starch
1 1/4 cup soy milk
2 cups mashed sweet potato
1/4 cup sugar
1/4 cup light brown sugar
1 tsp cinnamon
1/2 tsp salt
1 pie shell, refrigerated (thawed if frozen)

Preheat oven to 375 degrees F.

With an electric mixer, whip soy milk and egg replacer, and corn starch. Fold in mashed sweet potato, sugars, cinnamon, and salt.

Pour into pie shell and bake for 55 minutes. Cool on racks completely before serving.

Biscuits II

2 cups flour
1 Tbsp baking powder
2 tsp sugar
1/2 tsp cream of tartar
1/4 tsp salt
Cut in 1/2 cup margarine/veg shortening until coarse crumbs.
Make a well in center and add 2/3 cup soy milk all at once.
