BBQ Baked Tofu


1 cup tomato sauce (boiled down from tomato juice if you can it at home like I do)*
1/2 large yellow onion
1/2 bell pepper
1/4 cup agave
1/4 cup molasses
1/4 cup vinegar
1/2 tsp smoked paprika

1 tsp garlic powder
Salt and Pepper to taste

1 package extra firm tofu

Heat oven to 400 degrees.

Boil down your tomato juice if you need to then add all ingredients except tofu to the tomato sauce. Blend. I use a stick blender to make it a uniform texture, but you can also use a stand blender. Just make sure to ventilate in a stand blender because it can build up a lot of pressure.

If you like spicier barbecue sauce, add a dash or two of red pepper flakes before blending the sauce.

Press liquid from your tofu and cut into fillets. Spray a baking sheet with non-stick spray, or oil it with vegetable oil. Lay your tofu fillets down and cover with BBQ sauce. 

Cook for 20 minutes, turn over fillets and cook for 20 more. 

I served it over rice and edamame.

*So, if you are using store canned tomatoes, make sure it does NOT have any spices or flavorings to it. I'd recommend crushed tomatoes but you can also use stewed as they will all get blended anyway. Please don't use those little cans of "tomato sauce" as they have all kinds of flavors added and it will affect the flavor of the barbecue. Tomato paste thinned with some water works as well, but I haven't really played around with that so I don't know what ratios work best. Good luck!
