Silken Tofu Chocolate Chip Cookies

1/2 cup sugar
1/2 cup brown sugar
1/3 cup margarine
1 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
1/2 cup silken tofu
1 3/4 cup flour
1/2 cup vegan chocolate chips

Preheat oven to 350 degrees F. Cream together the sugar, brown sugar, margarine, vanilla, baking soda, and salt in an electric mixer until well combined.

Blend tofu until pureed and creamy.Add flour and blended tofu to mixing bowl and stir to combine. Fold in chocolate chips.

Drop equally sized cookie dough balls onto lightly greased cookie sheet and flatten slightly. Dividing dough into 16 dough balls is a good size.

Bake at 350 degrees F for 9-10 minutes, rotating halfway thru. Cook on cookie sheets until the firm up a little before transering to wire rack to cool completely.
