Basic Pancakes


1 cup white flour
1 cup whole wheat flour (or all white or all wheat, honestly)
2 teaspoons baking powder
1/2 tsp salt
2 cups soymilk
1 - 2 Tablespoons vegetable oil - or replace with apple sauce for oil free recipe

Mix dry ingredients, then add wet. Stir with a wire whisk until combined. Cook on a griddle on high (375 degrees F), a few minutes each side.

Serve with your favorite vegan sausage, I'm partial to Gimmie Lean brand, and eat the whole thing covered in real maple syrup.

Sheet Pan Pancakes Variation
Double the pancake batter recipe above and let it sit for a few minutes. Spray 9x13-inch baking dish with non-stick spray or margarine and flour. Heat oven to 425 degrees F. Pour pancake batter in even layer onto baking dish and add toppings (fruit, chocolate chips) if desired. Bake for 15 minutes, rotating half way thru cooking time for a more even heat. Optional to brush on some melted margarine before serving.
