Banana Bread


1/3 cup margarine, softened
1/2 cup sugar
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 ripe bananas, mashed with a fork
1/2 cup soymilk
1 tsp vanilla

Preheat oven to 350 degrees. Cream the margarine and sugar together, then stir in flour, baking powder and soda. Add the remaining ingredients and mix well. Pour into greased muffin tins and bake for 25-30 minutes, or a greased bread pan and bake for 50-60 minutes.

For added depth, add 1 tsp apple cider vinegar to the soymilk and let it curdle for a few minutes to simulate buttermilk before adding to other ingredients. Also swap the sugar for brown sugar.
