French Toast

2 cups soymilk (any kind, or other plant milks)
2 Tbsp flour
2 Tbsp nutritional yeast
Bread slices, about 6 to 8

Optional:
Add 1 tsp vanilla or a dash of cinnamon

Blend all ingredients except bread together (I use my magic bullet blender, which I love) until there are not clumps. Pour into a flat, shallow bowl.

Dip bread slices in batter and place on a heated and greased griddle (350 degrees F if electric griddle, medium-high on stove top). Brown both sides and serve with maple syrup. Sprinkle with powdered sugar.

Variation:
Did you know you can bake french toast? Place battered bread slices on a greased cookie sheet and cook at 400 degrees F, make sure to turn and brown both sides.  Good option when griddles aren't available.
