Plum Sauce

2 Tbsp vegetable oil 
1 small onion, finely chopped (about 1 cup) 
1 small sweet red pepper, finely chopped
1 Tbsp minced fresh ginger 
2-3 cloves garlic, minced 
1 lb. plums, diced (6-8 whole plums)
1/4 cup brown sugar, approximately
2 Tbsp soy sauce 
1 Tbsp apple cider vinegar 
1 tsp red chili flakes

In a small pot over medium-high heat, sauté onion, red pepper, ginger, and garlic in oil. Pour them into a blender or a food processor, add the plums, and purée until well incorporated. Pour back into the pot. 

Taste the sauce at this point, and add the sugar in a little at at time, testing as you go to get the right sweetness, depending on the plums you are using. Stir in soy sauce, apple cider vinegar, and chili flakes, and allow to simmer over medium-low heat for 15 to 20 minutes.

Serve over fried tofu, rice, steamed veggies.
