Applesauce Bread


1 1/4 cup applesauce
3/4 cup sugar
1/3 cup light oil
3 tsp Ener-G egg replacer (or other starch egg replacer - equivalent to 2 eggs)
3 Tbsp soymilk
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon

Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5-inch loaf pan, or a muffin tin (that makes a dozen muffins).

Combine wet ingredients (including starch egg replacer), then mix in the dry ingredients.

Bake for 60 mins for the loaf or 25-30 minutes for muffins, or until a toothpick inserted in the center comes out clean.

Note: you can jazz it up by mixing in raisins (soaked in hot water for 15 minutes and then drained well), chocolate chips, or sprinkling oat crumbs or strudel on top, but I'm not that fancy and loved it as is. I've also been told by bakers that adding in softened margarine for the oil makes a fluffier loaf (cream margarine and sugar together, then add in wet ingredients, then dry).
