Deviled Potatoes




8 large potatoes, or a dozen medium
1/4 cup veganaise
1 tsp mustard
1/2 tsp apple cider vinegar
Splash unsweetened soymilk.
Paprika to taste
Salt to taste
Pepper to taste
Nutritional Yeast to garnish

Bake (or roast if using small potatoes) at 350 degrees for an hour (half hour if small potatoes).

Halve potatoes lengthwise. Scoop out a circle of the potato, and place the spoonful of potato guts into a bowl. Put potato shells on a cooking sheet and place in the oven and cook for another 10 more minutes.

Mash the potato guts with veganaise, mustard, vinegar, and a dash of paprika, salt, and pepper to taste.  Add a splash or soymilk if too dry.

Spoon guts back into the shells and garnish with nutritional yeast, dill, diced green onions, or whatever you like.

If you feel like being fancy, use a star tip and a piping bag to make star tips of the potato guts.
