Silken Tofu Chocolate Pudding


1 chocolate bar, 100 grams, at least 80% cocoa
2 packs (700 grams) silken tofu
1/4 cup maple syrup
2 tsp vanilla
pinch salt

Melt chocolate in a double boiler or microwave, 30 seconds at a time. In a food processor, combine tofu, maple syrup, vanilla, and salt until smooth (a couple minutes).  Drizzle in melted chocolate with the food processor on, until incorporated. Serve in decorative ramekins or small cups.

options: add lime zest, pinch of red chili, packet of instant coffee
garnish with cocoa powder, peanut bits, cookie crumbs

Edit to add variation:

Lemon or Lime Pudding

2 packs (700 grams) silken tofu
1/4 cup sugar (or down to 3 Tbsp if trying to cut back)
2 tsp vanilla
Juice from 1 large lemon or 2 small limes
zest from above citrus

Combine all in blender or food processor until creamy. Transfer to air tight container to set-up in fridge (at least a few hours)
